As we continue to monitor the situation with Coronavirus (COVID-19), we will be making the following adjustments:
Reston Location: Serving take-out, pick-up, and delivery from 11am to 6pm.
Herndon Location: Will remain temporarily closed.
The health of our customers and team members is vital, which is why we continue to practice safe food handling, such as glove usage and frequent hand washing. Additionally, we are disinfecting high traffic areas every hour, such as door handles, ordering stations, and other surfaces.

A Unique Cooking Process
Fresh, Quality Ingredients is Key
Our chickens are received fresh daily then trimmed and rubbed in our unique blend of spices. Marinated chickens are stored in an air tight container and refrigerated for 24 hours.
After the marination process is complete, chickens are skewed, and rotated over hot, wood-chip flames for nearly two hours, until an internal temperature of 165 degrees Fahrenheit is reached. This unique cooking process allows the chicken drippings to interact with the hot coals, generating an aromatic smoke that infuses tremendous flavor into the meat of the chicken.
Fun Fact: Once marination is complete, none of our fresh chickens remain in store for more than 24 hours. We do go through quite a lot!
Throughout the years we have nearly perfected ways to ensure our foods are prepared and served as fresh and delicious as possible:
On Site Preparation: Most of our menu items are prepared on site including our marinade, sauces, yucca fries, rice, beans, salads, and desserts. This allows us to ensure optimum freshness, consistency, and quality.
Fresh Ingredients: We believe that nature provides the most robust flavors so you will not find artificial ingredients or preservatives in our recipes. It is not uncommon to walk in to our store and see a team member slicing and de-stemming freshly boiled yucca, or de-seeding peppers for our sauces.
Fresh, Hot Chicken: Our chickens require nearly two hours to roast, so meeting demand and providing quick service can be a challenge. In response, we have developed a system to ensure cooked chicken skews are coming out every 15 minutes and served within 30 minutes. Any unused chickens are de-boned and used in our delicious sandwiches.

Pollo Peru is quite popular for catering and we promise our food will be a big hit at your next event! It's far less boring than traditional finger foods, it retains its quality throughout the delivery and serving process, and most importantly, it's delicious and affordable!
We've catered events as special as weddings, important as corporate meetings, and as casual as backyard BBQs. The truth is our food is a big crowd hit, and fits in just about anywhere!
